🇮🇹 Polpo alla Luciana (Octopus in Tomato Sauce)
A Neapolitan classic with tender octopus simmered in a rich tomato and olive sauce.

Ingredients
Octopus: 2 lbs (1 kg), cleaned
Tomato sauce: 1 ½ cups (350 ml)
Olives: ½ cup (100 g), mixed green and black
Garlic: 2 cloves, minced
Chili flakes: 1 tsp (optional)
Olive oil: 3 tbsp (45 ml)
Parsley: chopped, for garnish
Salt: to taste

Instructions
1️⃣ Heat olive oil in a pot and sauté garlic until fragrant.
2️⃣ Add the cleaned octopus and cook for 5 minutes.
3️⃣ Pour in tomato sauce and stir in chili flakes and a pinch of salt.
4️⃣ Cover and simmer on low heat for 45 minutes to 1 hour.
5️⃣ Add olives and cook uncovered for another 10 minutes.
6️⃣ Garnish with chopped parsley and serve hot with bread.
