Ingredients
• Fusilli pasta: 12 oz (340 g)
• Basil pesto: ½ cup (120 g)
• Olive oil: 2 tbsp
• Parmesan cheese: ¼ cup (30 g), grated
• Salt: to taste
• Pine nuts: 2 tbsp, toasted (optional)
Instructions
1️⃣ • Bring a large pot of salted water to a boil.
2️⃣ • Cook fusilli pasta until al dente, then drain (reserve ½ cup of pasta water).
3️⃣ • Toss pasta with pesto and olive oil in a large bowl.
4️⃣ • Add a splash of reserved pasta water if needed to loosen the sauce.
5️⃣ • Mix in Parmesan cheese and pine nuts if using.
6️⃣ • Serve warm, garnished with extra cheese.
