Homemade Tomato Soup
Ingredients:
2 tbsp olive oil
1 medium onion, chopped
2 garlic cloves, minced
1 can (28 oz) crushed tomatoes
1 cup vegetable or chicken broth
1 tsp sugar (optional, to cut acidity)
Salt and pepper to taste
1/4 tsp dried basil or oregano (optional)
Instructions:
Heat olive oil in a pot over medium heat.
Add chopped onion and sauté until soft (about 5 minutes).
Stir in garlic and cook for 1 minute.
Add crushed tomatoes and broth. Bring to a simmer.
Season with salt, pepper, sugar, and herbs.
Simmer uncovered for 15–20 minutes.
Blend for a smooth texture (optional), or leave it chunky.
Serve hot with toasted cheesy bread or croutons.
