Ingredients
Crust:
2 cups almond flour
¼ cup coconut flour
½ cup butter (softened)
½ cup powdered erythritol or allulose
1 large egg
1 tsp vanilla extract
½ tsp baking powder
Cream Cheese Frosting:
8 oz cream cheese (softened)
¼ cup butter (softened)
½ cup powdered erythritol or allulose
1 tsp vanilla extract
Toppings (keto-friendly fruits):
Strawberries (in moderation)
Raspberries
Blackberries
Blueberries
(Avoid high-carb fruits like pineapple, kiwi, banana, and cherries — instead, stick to berries for keto!)
Instructions
1. Make the Crust
Preheat oven to 350°F (175°C).
Mix almond flour, coconut flour, baking powder, and sweetener.
Add butter, egg, and vanilla. Mix into a dough.
Press dough evenly into a greased pizza pan or 9×13 baking dish.
Bake for 12–15 minutes, until lightly golden. Cool completely.
2. Make the Frosting
Beat cream cheese and butter until smooth.
Add sweetener and vanilla, whip until fluffy.
3. Assemble the Fruit Pizza
Spread frosting over cooled crust.
Arrange keto-friendly berries on top.
Chill for at least 30 minutes before slicing.
