🍗 Grilled Chicken with Creamy Herb Sauce, Potatoes & Roasted Cherry Tomatoes

🛒 Ingredients:
2 chicken breasts
1 tbsp olive oil
Salt & black pepper to taste
1 tsp garlic powder or minced garlic
1 cup cherry tomatoes
2 medium potatoes, thinly sliced
1 tbsp butter
Chopped parsley for garnish
For the Creamy Herb Sauce:
½ cup heavy cream
1 tbsp Dijon mustard
1 tsp dried herbs (thyme, oregano, or parsley)
Salt & pepper to taste
👨🍳 Instructions:
Prepare potatoes: Preheat oven to 200°C (400°F). Toss sliced potatoes with olive oil, salt, and pepper. Roast for 20–25 mins until golden.
Cook chicken: Season chicken with garlic, salt, and pepper. Grill or pan-sear for 6–7 mins per side until golden and fully cooked.
Roast tomatoes: Add cherry tomatoes to the oven during the last 10 mins of roasting. Let them blister slightly.
Make the sauce: In a small pan, combine cream, mustard, herbs, salt, and pepper. Simmer for 3–5 minutes until slightly thickened.
Assemble: Slice the grilled chicken, pour over the creamy herb sauce, and serve with roasted potatoes and tomatoes. Garnish with parsley.
