🐙 Polpo alla Luciana (Octopus with Olives and Tomato Sauce)
This Neapolitan dish features tender octopus simmered in a rich tomato sauce with olives and capers, resulting in a flavorful seafood stew.
Ingredients
• Octopus: 2 lbs (900 g), cleaned
• Tomato sauce: 1 cup (240 ml)
• Black and green olives: ½ cup (100 g)
• Garlic: 3 cloves, minced
• Olive oil: 3 tbsp
• Capers: 2 tbsp
• Fresh parsley: 2 tbsp, chopped
• Salt and pepper: to taste
Instructions
1️⃣ • Heat olive oil in a large pan and sauté garlic until fragrant.
2️⃣ • Add cleaned octopus and cook for 5 minutes.
3️⃣ • Stir in tomato sauce, olives, and capers.
4️⃣ • Season with salt and pepper.
5️⃣ • Cover and simmer on low heat for 45–60 minutes until octopus is tender.
6️⃣ • Garnish with fresh parsley and serve hot with bread.
