1 cup unsalted butter, softened

3–4 cups powdered sugar (adjust for desired consistency)

1 tsp vanilla extract

2 tbsp heavy cream (or milk)

Pinch of salt

2 tbsp rainbow sprinkles (for decorating)

🔧 Instructions

1. Preheat & Prep
Preheat your oven to 350°F (175°C).

Line a 12-cup muffin tin with cupcake liners.

2. Make the Cupcake Batter
In a medium bowl, whisk together flour, baking powder, and salt.

In a large mixing bowl, beat the butter and sugar together until light and fluffy, about 3 minutes.

Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the dry ingredients. Mix until just combined.

Gently fold in the rainbow sprinkles, being careful not to overmix.

3. Bake the Cupcakes
Divide the batter evenly among the cupcake liners (fill each about ¾ full).

Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.

Let the cupcakes cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.

4. Make the Vanilla Buttercream Frosting
In a large bowl, beat the butter until creamy and smooth.

Gradually add the powdered sugar, 1 cup at a time, beating well between additions.

Add the vanilla extract, heavy cream, and a pinch of salt, and beat until light and fluffy, about 2-3 minutes.

If the frosting is too thick, add more cream (1 tbsp at a time) until you reach the desired consistency.
