Heavenly Banana Walnut Dream Cake with Creamy Frosting
Ingredients:
1 ½ cups mashed ripe bananas (about 3 large bananas)
2 ½ cups all-purpose flour
1 ½ teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
½ teaspoon nutmeg
½ cup unsalted butter, softened
½ cup vegetable oil
1 cup granulated sugar
½ cup brown sugar, packed
3 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
1 cup chopped walnuts (plus extra for garnish, optional)
For the Frosting:
8 oz cream cheese, softened
½ cup unsalted butter, softened
3 ½ cups powdered sugar
1 teaspoon vanilla extract
Pinch of salt
Directions:
Preheat oven to 350°F (175°C) and grease a 9x13-inch baking pan.
In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In a large bowl, beat the butter, oil, granulated sugar, and brown sugar until light and fluffy.
Add eggs one at a time, beating well after each addition. Mix in mashed bananas and vanilla.
Gradually add dry ingredients to the wet mixture, alternating with buttermilk, starting and ending with the flour mixture.
Fold in chopped walnuts until evenly distributed.
Pour the batter into the prepared pan and smooth the top.
Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean. Cool completely in the pan.
To make the frosting, beat cream cheese and butter until creamy and smooth.
Add powdered sugar gradually, then mix in vanilla and a pinch of salt until fully combined and fluffy.
Frost the cooled cake and sprinkle additional walnuts on top if desired. Slice and serve.
