Spicy Cajun Shrimp Bites with Remoulade Sauce
Ingredients
For the Shrimp Bites:
1 lb large shrimp, peeled and deveined (tails removed)
1 tbsp olive oil
1 tsp Cajun seasoning
½ tsp smoked paprika
½ tsp garlic powder
¼ tsp salt
¼ tsp black pepper
¼ tsp cayenne pepper (optional, for extra spice)
12-15 small toasted baguette slices or crackers
½ cup coleslaw mix (optional, for crunch)
1 tbsp fresh parsley, chopped (for garnish)
For the Remoulade Sauce:
½ cup mayonnaise
1 tbsp Dijon mustard
1 tbsp lemon juice
1 tsp hot sauce (e.g., Tabasco)
½ tsp garlic powder
½ tsp smoked paprika
½ tsp Cajun seasoning
1 tbsp finely chopped pickles or relish
1 tsp Worcestershire sauce
Salt and pepper, to taste
Directions
Prepare the shrimp: In a bowl, toss the shrimp with olive oil, Cajun seasoning, smoked paprika, garlic powder, salt, black pepper, and cayenne (if using). Let it marinate for 10 minutes.
Cook the shrimp: Heat a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until they turn pink and opaque. Remove from heat.
Make the remoulade sauce: In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, hot sauce, garlic powder, smoked paprika, Cajun seasoning, pickles, Worcestershire sauce, salt, and pepper. Refrigerate until ready to serve.
Assemble the bites: Place a small amount of coleslaw mix on each toasted baguette slice or cracker. Top with a Cajun shrimp and a small dollop of remoulade sauce.
Garnish & serve: Sprinkle with fresh parsley and serve immediately.
