Honey Bacon Roasted Potatoes
Ingredients:
2 lbs baby potatoes, halved
6 strips thick-cut bacon, chopped
2 tbsp olive oil
2 tbsp honey
1 tsp garlic powder
1/2 tsp smoked paprika
Salt and pepper, to taste
1 tbsp chopped fresh parsley (optional, for garnish)
Directions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
In a large bowl, toss halved baby potatoes with olive oil, honey, garlic powder, smoked paprika, salt, and pepper.
Spread the seasoned potatoes evenly on the baking sheet. Scatter chopped bacon over the top.
Roast in the oven for 35–40 minutes, flipping once halfway through, until potatoes are golden brown and bacon is crispy.
Drizzle with a little extra honey before serving, if desired, and garnish with chopped parsley.
