Vidalia Sweet Onion Hushpuppies
~~Ingredients~~
1-1/2 cups plain cornmeal
1/2 cup flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon sugar
1 small Vidalia onion, diced (1/2 cup)
1-1/2 cups whole buttermilk
1 large egg
**vegetable, fish grease or peanut oil for frying
**They are very good fried in the fish grease where you fried your fish.
~~Instructions~~
Add all dry ingredients together and mix. Then add your wet ingredients to your dry ingredients and add the onions. Let the batter rest about 5 minutes.
Fry in the grease behind where you cooked your fish, or add about 3 inches of oil to the bottom of heavy bottom dutch oven or deep skillet - being sure the oil doesn't come more than halfway up the side of the vessel. Heat oil to 350 degrees.
Working in batches, drop the batter by heaping tablespoonsful carefully into the hot oil and fry for 5 to 6 minutes, turning over once, or until golden brown and cooked through. Drain on paper towels or a wire rack over paper towels.
Servings- 24 hush puppies
