Classic New York Cheesecake
Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/3 cup melted butter
4 (8 oz) packages cream cheese, softened
1 1/4 cups granulated sugar
1/2 cup sour cream
2 teaspoons vanilla extract
5 large eggs
Directions:
Preheat oven to 325°F (163°C). In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Set aside.
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in 1 1/4 cups sugar and continue beating until creamy. Blend in the sour cream and vanilla extract.
Add the eggs one at a time, beating just until blended after each addition. Pour the cheesecake batter over the prepared crust.
Bake for 55-70 minutes, or until the center is set. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.
After 1 hour, remove the cheesecake from the oven and allow it to cool to room temperature. Refrigerate overnight.
Serve chilled, topped with fresh berries or fruit sauce if desired.
