Sweet Blueberry Biscuits
Makes 6 biscuits
Total Time: 25 minutes
Ingredients:
2 cups all-purpose flour
3 ounces fresh blueberries
1 cup cold milk
1/3 cup granulated sugar
5 tablespoons cold butter, cut into pieces
4 teaspoons baking powder
1 teaspoon salt
For Lemon Glaze (optional):
1 cup powdered sugar
1⁄2 teaspoon lemon juice
1 teaspoon vanilla extract
2-3 tablespoons water
Instructions:
Preheat oven to 450°F. Line a baking sheet with parchment.
In a large bowl, mix together the flour, sugar, baking powder and salt.
Add the cold milk and blueberries. Stir just until a shaggy dough forms.
Scatter the cold butter pieces over top. Knead and fold gently to incorporate.
On a floured surface, pat dough into a 1⁄4 to 1⁄8 inch thickness. Cut out biscuits using a 2-3 inch biscuit cutter, pressing straight down without twisting.
Place biscuits on prepared baking sheet. Sprinkle tops lightly with sugar.
Bake for 8-12 minutes until golden brown. Brush tops with melted butter.
For glaze, whisk together powdered sugar, lemon juice, vanilla and water until smooth. Drizzle over warm biscuits before serving.
