Beef and Sun-Dried Tomato Tortellini in Garlic Parmesan Cream Sauce

Ingredients:

For the Pasta:
1 lb ground beef
1 (9 oz) package cheese tortellini
2 tablespoons olive oil
½ cup sun-dried tomatoes, chopped
3 cloves garlic, minced
½ teaspoon red pepper flakes (optional)
Salt and black pepper, to taste
For the Sauce:
1 cup heavy cream
½ cup beef broth
1 teaspoon Italian seasoning
1 cup grated Parmesan cheese
1 tablespoon butter
2 cups fresh spinach (optional, for extra greens)
Fresh basil, for garnish

Directions:

Cook the Tortellini: Bring a large pot of salted water to a boil. Cook tortellini according to package instructions. Drain and set aside.
Brown the Beef: In a large skillet over medium heat, heat 1 tablespoon of olive oil. Add the ground beef, season with salt and pepper, and cook until browned. Remove and set aside.
Sauté Aromatics: In the same skillet, add the remaining olive oil. Stir in garlic, sun-dried tomatoes, and red pepper flakes. Sauté for about 1 minute until fragrant.
Make the Sauce: Pour in the beef broth and heavy cream. Stir in Italian seasoning and bring to a gentle simmer. Let it cook for 2-3 minutes to thicken slightly.
Add Parmesan & Spinach: Stir in Parmesan cheese and butter, letting them melt into the sauce. If using, add fresh spinach and let it wilt.
Combine Everything: Return the cooked beef and tortellini to the skillet, tossing everything in the creamy sauce. Let it cook for another 2 minutes to absorb the flavors.
Serve & Garnish: Remove from heat and garnish with fresh basil. Serve warm and enjoy!
