Pickled Eggs, Sausage & Onions
Ingredients:
1 cup white vinegar
1 cup water
1/4 cup sugar
6 hard-boiled eggs, peeled
1 pound sausage of your choice (such as kielbasa or smoked sausage), sliced
1 onion, thinly sliced
1 tablespoon salt
1 teaspoon black peppercorns
1 teaspoon mustard seeds
1 teaspoon red pepper flakes (optional, for heat)
Instructions:
Prepare the Pickling Liquid:
In a medium saucepan, combine white vinegar, water, sugar, salt, black peppercorns, mustard seeds, and red pepper flakes (if using).
Bring the mixture to a boil over medium-high heat, then reduce the heat and let it simmer for 5 minutes to meld the flavors together.
Assemble the Jar:
In a clean glass jar or container with a lid, place the peeled hard-boiled eggs, sliced sausage, and thinly sliced onion.
Carefully pour the hot pickling liquid over the eggs, sausage, and onions, making sure everything is fully submerged in the brine.
Cool and Store:
Allow the mixture to cool to room temperature.
Once cooled, seal the jar and refrigerate for at least 24 hours to let the flavors develop. The longer it sits, the more intense the flavors will become!
