Functional Fruit Cake 🍊🍇

• 4 free-range eggs
• 1 cup coconut sugar or stevia powder
• 1 tbsp. of butter or 2 tbsp. coconut oil
• 1 cup of dried fruits (dates, plums, apricots)
• ½ cup of raisins or cranberries
• 1 ½ cup almond flour or oat mixture
• 1 cup chopped walnuts
• 1 tbsp. baking powder
• Orange peel zest
• 1 tsp. vanilla essence (optional)
• Pinch of sea salt
👵🏼Instructions👵🏼
1. Base: Beat the eggs with coconut sugar or stevia. Add the melted butter or coconut oil.
2. Mixture: Add the nuts, raisins, almond flour, walnuts, yeast, orange zest, vanilla, and salt. Mix well.
3. Mold: Grease a mold with coconut oil and sprinkle with cocoa and cinnamon.
4. Bake: Pour the dough and bake at 180°C for 35-40 min. Let cool before serving.
