Grilled Salmon with Cucumber Dill Penne
Char-Grilled Salmon over Creamy Cucumber Dill Pasta
Ingredients:
2 salmon fillets (about 6 oz each)
1 tablespoon olive oil
1 teaspoon lemon zest
1 tablespoon lemon juice
Salt and black pepper to taste
8 oz penne pasta
1/2 cup Greek yogurt (plain, unsweetened)
1/2 large cucumber, grated and drained
2 tablespoons fresh dill, chopped
1 clove garlic, minced
1 tablespoon olive oil (for the pasta sauce)
1 tablespoon fresh parsley, chopped (optional for garnish)
Directions:
Preheat your grill or grill pan over medium heat.
Rub the salmon fillets with olive oil, lemon zest, lemon juice, salt, and pepper.
Grill the salmon for 4-5 minutes per side, or until cooked through and slightly charred. Set aside.
While the salmon is cooking, bring a large pot of salted water to a boil and cook the penne according to the package instructions. Drain and set aside.
In a medium bowl, whisk together the Greek yogurt, grated cucumber (squeeze out excess moisture), fresh dill, garlic, olive oil, and a pinch of salt.
Toss the cooked pasta with the cucumber dill sauce until well coated.
Plate the penne, top with grilled salmon fillets, and garnish with parsley if desired. Serve warm or at room temperature.
