Tomato Spinach Turkey Pasta Skillet
One-Skillet Tomato Spinach Pasta with Ground Turkey
Ingredients:
1 tablespoon olive oil
1 lb ground turkey
1 teaspoon dried oregano
1/2 teaspoon paprika
Salt and black pepper to taste
3 cloves garlic, minced
2 cups cherry tomatoes, halved
2 cups fresh spinach leaves
1/2 cup low-sodium chicken broth or water
8 oz whole wheat penne or fusilli pasta
1/4 cup grated Parmesan (optional)
Fresh parsley for garnish
Directions:
Cook pasta according to package directions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add ground turkey, oregano, paprika, salt, and pepper. Cook until browned and cooked through, breaking it apart as it cooks, about 7–8 minutes.
Add garlic and stir for 1 minute until fragrant. Toss in cherry tomatoes and cook for 3–4 minutes until they begin to soften.
Stir in spinach and cook until wilted. Pour in broth and simmer for 2–3 minutes to let the flavors blend.
Add cooked pasta into the skillet and mix until fully coated. Cook for 1–2 minutes more to warm everything through.
Garnish with Parmesan (if using) and fresh parsley before serving.
