🍄 Creamy Mushroom and Asparagus Chicken Penne
Ingredients:
12 oz penne pasta
2 tbsp olive oil
1 lb boneless, skinless chicken breasts, cubed
2 cups sliced mushrooms
1 bunch asparagus, cut into 2-inch pieces
3 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1 cup grated Parmesan cheese
1 tsp Italian seasoning
Salt and pepper to taste
Instructions:
Cook Pasta:
Cook penne according to package directions. Drain and set aside.
Cook Chicken:
In a large skillet, heat olive oil over medium heat. Add chicken, season with salt and pepper, and cook until browned and cooked through. Remove and set aside.
Cook Vegetables:
In the same skillet, add mushrooms and asparagus. Cook until tender, about 5–7 minutes. Add garlic and cook for 1 more minute.
Make Sauce:
Stir in heavy cream, chicken broth, Parmesan cheese, and Italian seasoning. Simmer until thickened, about 3–5 minutes.
Combine:
Add cooked chicken and pasta to the skillet. Toss to coat everything in the creamy sauce.
Serve:
Garnish with extra Parmesan if desired and serve warm.
