Garlic Shrimp Quinoa Bowl
Ingredients:
1 cup quinoa, rinsed
2 cups vegetable broth (or water)
1 pound large shrimp, peeled and deveined
4 cloves garlic, minced
2 tablespoons olive oil
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
1 lemon, cut into wedges
1/2 teaspoon salt
1/4 teaspoon black pepper
1 red bell pepper, diced
1/2 cup cherry tomatoes, halved
1/4 cup crumbled feta cheese (optional)
Instructions:
1. In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all the liquid is absorbed and the quinoa is cooked through. Fluff with a fork and set aside.
2. While the quinoa is cooking, prepare the shrimp. In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and cook for about 30 seconds, or until fragrant, being careful not to burn the garlic.
3. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Season with salt and pepper.
4. Add the diced red bell pepper and halved cherry tomatoes to the skillet with the shrimp. Cook for another 2-3 minutes, or until the vegetables are slightly softened.
5. Stir in the cooked quinoa, parsley, and cilantro. Gently toss to combine everything.
6. Serve the Garlic Shrimp Quinoa Bowl immediately. Top with a lemon wedge and crumbled feta cheese (if using). Enjoy!
