Ingredients:
For the Cake:
🌾 Plain flour: 200g (1¾ cups)
🍫 Cocoa powder: 75g (¾ cup)
🥄 Baking powder: 2 tsp
🥄 Bicarbonate of soda: 1½ tsp
🧂 Salt: ½ tsp
🍬 Caster sugar: 250g (1¼ cups)
🥚 Eggs: 2 large
🥛 Buttermilk: 240ml (1 cup)
☕ Strong coffee: 240ml (1 cup), cooled (or hot water)
🌱 Vegetable oil: 120ml (½ cup)
🌰 Vanilla extract: 2 tsp
For the Chocolate Frosting:
🧈 Unsalted butter: 150g, softened
🍫 Cocoa powder: 50g (½ cup)
🍬 Icing sugar: 300g (2½ cups)
🥛 Milk: 4–5 tbsp (adjust as needed)
🌰 Vanilla extract: 1 tsp
Method:
For the Cake:
🔥 Preheat the oven:
Preheat your oven to 175°C (fan). Grease and line two 20cm (8-inch) round cake tins with parchment paper.
🌾 Mix dry ingredients:
In a large bowl, sift together the flour, cocoa powder, baking powder, bicarbonate of soda, and salt. Stir in the caster sugar.
🥛 Combine wet ingredients:
In another bowl, whisk together the eggs, buttermilk, coffee, vegetable oil, and vanilla extract.

Gradually pour the wet mixture into the dry ingredients, whisking until smooth and well combined. The batter will be thin—don’t worry!

Divide the batter evenly between the prepared tins. Bake for 30–35 minutes, or until a skewer inserted into the centre comes out clean.
Cool in the tins for 10 minutes, then transfer to a wire rack to cool completely.
For the Frosting:

In a large bowl, beat the softened butter until light and fluffy.
🍫 Add cocoa and sugar:
Sift in the cocoa powder and icing sugar, then mix until combined.
🥛 Adjust consistency:
Gradually add the milk, one tablespoon at a time, until the frosting reaches a smooth and spreadable consistency. Stir in the vanilla extract.
Assemble the Cake:
🎂 Layer and frost:
Place one cooled cake layer on a serving plate. Spread an even layer of frosting on top. Place the second cake layer over it and spread frosting evenly across the top and sides.
