Smoky and Savory Barbecue Chicken Pasta
Ingredients:
2 boneless, skinless chicken breasts
2 tablespoons olive oil
Salt and pepper, to taste
1 cup barbecue sauce
12 oz penne pasta
1/2 cup red onion, thinly sliced
1/2 cup corn kernels (fresh or frozen)
1/2 cup shredded mozzarella cheese
1/4 cup chopped fresh cilantro (for garnish)
1 tablespoon ranch dressing (optional)
Directions:

Preheat your grill or grill pan to medium-high heat. Season the chicken breasts with olive oil, salt, and pepper. Grill the chicken for 6-7 minutes per side, until fully cooked. Brush each side with barbecue sauce during the last 2 minutes of cooking.
Remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.
Meanwhile, cook the penne pasta according to package instructions. Drain and set aside.
In a large skillet, heat a little olive oil over medium heat. Add the red onion and cook for 3-4 minutes, until softened.
Stir in the corn and cook for an additional 2 minutes, until heated through.
Add the cooked pasta to the skillet and toss it with the onions and corn. Pour in the remaining barbecue sauce and stir to coat everything evenly.
Gently fold in the grilled chicken strips and toss until well combined.
Serve the pasta topped with shredded mozzarella cheese and a sprinkle of chopped cilantro. Drizzle with ranch dressing if desired.
