Cheesecake Fruit Salad Recipe
This Cheesecake Fruit Salad combines the creamy, rich flavors of cheesecake with the freshness of fruits, making it the perfect sweet and refreshing treat. It's great for potlucks, BBQs, or just as a light dessert.
Ingredients:
For the Cheesecake Filling:
8 oz cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup Greek yogurt or sour cream
1/2 cup heavy cream
1 tablespoon fresh lemon juice
For the Fruit Salad:
1 1/2 cups strawberries, hulled and sliced
1 cup blueberries
1 cup grapes, halved
1 cup pineapple chunks (fresh or canned)
1 medium mango, diced
1 banana, sliced
1 kiwi, peeled and sliced (optional)
For Garnish (Optional):
Mint leaves
Crushed graham crackers or granola
Instructions:
1. Make the Cheesecake Filling:
In a medium mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy.
Add the powdered sugar and vanilla extract, then beat again until combined.
Add the Greek yogurt (or sour cream), heavy cream, and lemon juice. Mix until the mixture becomes smooth and fluffy. If the mixture is too thick, you can add a little more heavy cream to reach your desired consistency.
Set the cheesecake filling aside.
2. Prepare the Fruit:
Wash and prepare the fruit: slice the strawberries, halve the grapes, chop the mango, peel and slice the banana, and cut the kiwi (if using).
In a large mixing bowl, combine all the fresh fruit.
3. Combine the Fruit with the Cheesecake Filling:
Add the cheesecake filling to the bowl with the fruit. Gently toss everything together using a spatula or spoon, making sure the fruit is well-coated with the creamy cheesecake mixture.
You can adjust the amount of cheesecake filling based on your preference for creaminess.
4. Garnish and Serve:
Garnish the cheesecake fruit salad with fresh mint leaves and a sprinkle of crushed graham crackers or granola for added crunch, if desired.
Serve immediately or refrigerate for 30 minutes before serving for an even more refreshing treat.
5. Enjoy:
This cheesecake fruit salad is perfect for summer gatherings, parties, or even as a healthy dessert option for family dinners.
