Hearty & Healthy Baked Lentil Sweet Potato Patties Burgers ๐ŸŒŸ๐Ÿงก๐Ÿ˜‹

Ingredients
1 cup (190g) cooked brown or green lentils, drained well (from ~1/2 cup dry)
1 cup (200g) cooked and mashed sweet potato (about 1 medium)
1/2 cup (45g) rolled oats or breadcrumbs (use gluten-free if needed)
1/4 cup finely chopped onion or shallot
2 cloves garlic, minced
1 tbsp (8g) ground flaxseed mixed with 3 tbsp water (flax egg)
1 tsp (3g) ground cumin
1/2 tsp (1.5g) smoked paprika
1/4 tsp ground coriander
1/4 tsp salt, or to taste
Black pepper to taste
2 tbsp chopped fresh cilantro or parsley
1-2 tbsp (15-30ml) olive oil for pan-frying (optional, can be baked)

Directions
1. Ensure lentils are well-drained and sweet potato is mashed and relatively cool.
2. If baking, preheat oven to 375ยฐF (190ยฐC). Lightly grease a baking sheet or line with parchment paper.
3. In a large bowl, combine the cooked lentils and mashed sweet potato. Mash them together slightly with a fork or potato masher, leaving some texture.
4. Add the rolled oats/breadcrumbs, chopped onion, minced garlic, prepared flax egg, cumin, smoked paprika, ground coriander, salt, pepper, and fresh cilantro/parsley to the bowl.
5. Mix everything together until well combined. The mixture should be firm enough to form patties. If too wet, add a bit more oats/breadcrumbs; if too dry, add a teaspoon of water.
6. Form the mixture into 4-6 patties (depending on desired size for burgers or smaller patties). Press them firmly.
7. For Baking: Place the patties on the prepared baking sheet. Bake for 15-20 minutes, then carefully flip and bake for another 10-15 minutes, until golden brown and heated through.
8. For Pan-Frying: Heat the oil in a large skillet over medium heat. Cook the patties for 4-6 minutes per side, until nicely browned and heated through.
9. Serve warm on buns as burgers, or alongside a salad or roasted vegetables.
