Ferrero Rocher cake
Ingredients:
For the Cake:
* 1 cup (2 sticks) unsalted butter, softened
* 2 cups granulated sugar
* 4 large eggs
* 1 teaspoon vanilla extract
* 2 cups all-purpose flour
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1 cup milk
* 1 cup unsweetened cocoa powder
* 1 cup hot brewed coffee
For the Chocolate Ganache:
* 1 cup heavy cream
* 12 ounces semi-sweet chocolate chips
For the Nutella Frosting:
* 1 cup (2 sticks) unsalted butter, softened
* 2 cups powdered sugar
* 1/2 cup Nutella
For the Decoration:
* 12 Ferrero Rocher chocolates
* 1/2 cup chopped hazelnuts
Instructions:
Make the Cake:
* Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
* In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
* In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
* Gradually add the dry ingredients to the wet ingredients, alternating with the milk and cocoa powder, beginning and ending with the dry ingredients.
* Stir in the hot coffee until just combined.
* Divide the batter evenly between the prepared cake pans.
* Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
* Let the cakes cool in the pans for 10 minutes before inverting onto wire racks to cool completely.
Make the Chocolate Ganache:
* Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer.
* Pour the hot cream over the chocolate chips in a heatproof bowl.
* Let sit for a few minutes, then stir until smooth and melted.
* If the ganache is too thick, add a splash of hot cream and stir until the desired consistency is reached.
Make the Nutella Frosting:
* In a large bowl, cream together the butter and powdered sugar until light and fluffy.
* Beat in the Nutella until well combined.
Assemble the Cake:
* Once the cakes are completely cooled, level the tops if necessary.
* Place one cake layer on a serving plate.
* Spread a layer of ganache over the cake layer.
* Top with the second cake layer.
* Frost the top and sides of the cake with the Nutella frosting.
* Decorate the cake with the Ferrero Rocher chocolates and chopped hazelnuts.
