Ingredients:

1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 lb rotini pasta
4 tbsp butter
4 cloves garlic, minced
1/2 cup chicken broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1/4 cup sun-dried tomatoes, oil-packed, drained and chopped
1 tbsp olive oil
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
Salt and pepper to taste
Fresh basil leaves, for garnish
Lemon wedges, for serving

Directions:

Cook the Rotini: Bring a large pot of salted water to a boil. Add the rotini pasta and cook until al dente, according to the package instructions. Drain and set aside.
Sear the Chicken: While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and season with Italian seasoning, salt, and pepper. Sauté for 6–8 minutes until the chicken is golden brown and cooked through. Transfer to a plate and keep warm.

Deglaze with Broth: Pour in the chicken broth, scraping up any flavorful bits stuck to the pan. Let it simmer gently for 1–2 minutes.
Add Cream & Cheese: Stir in the heavy cream and Parmesan cheese. Lower the heat and let the sauce simmer for 2–3 minutes, stirring frequently until slightly thickened and creamy.
Bring It All Together: Return the cooked chicken to the pan along with the sun-dried tomatoes. Mix to combine and allow everything to heat through for 1–2 minutes.
Toss with Pasta: Add the drained rotini into the skillet and gently toss until the pasta is fully coated in the creamy garlic Parmesan sauce.
Finish with Herbs: Stir in chopped fresh parsley, and garnish with fresh basil leaves for added flavor and color.
