Ingredients
Quick Pickles
3 cups of white vinegar
3 cups of granulated sugar
1 tablespoon of kosher salt
2 tablespoons of pickling spice
6 dried red chilis, optional
6 sprigs of fresh dill
1 pound of Kirby cucumbers (pickling cucumber), cut into spears, about 4 small cucumbers
1 cup of sliced yellow onion
Pickled Cucumber

π₯1 teaspoon of celery seed

π₯2 large thinly sliced fresh cucumbers

π₯4 sprigs of fresh dill (I chose to trim the stalks off and left only the dill fronds)
Pickled Mushrooms
π1Β½ pounds of mushrooms (white button, cremini, baby Bella)
π1 tablespoon of vegetable or olive oil
π1Β½ teaspoons of sea salt, divided into Β½ teaspoon and 1 teaspoon
π2 teaspoons of minced garlic
π2 cups of water
π1 cup of white vinegar
π2 tablespoons of granulated sugar
π4 cloves whole garlic, sliced thinly
π2 teaspoons of black peppercorns, divided among the jars
πBundle of fresh thyme
