Always use room-temperature eggs for baking, as they will emulsify better with other ingredients – especially for high-fat recipes like baked cakes. If you prefer storing your eggs in the fridge, bring them to room temperature by placing them in a bowl of lukewarm water for 15 minutes. PS: Most South African baking recipes are standardised for using extra-large eggs.
