🍓 Strawberry Crunch Cookies 🌟
Ingredients:
For the Strawberry Cookies:
1 ½ cups all-purpose flour
½ tsp baking powder
¼ tsp baking soda
¼ tsp salt
½ cup unsalted butter, softened
¾ cup granulated sugar
1 large egg
1 tsp vanilla extract
2 tbsp freeze-dried strawberries, crushed into powder
2-3 drops pink food coloring (optional)
For the Crunch Topping:
½ cup crushed vanilla cookies (like Golden Oreos or shortbread)
2 tbsp freeze-dried strawberries, crushed
2 tbsp melted butter
1 tbsp granulated sugar
Instructions:
1. Prep the Crunch Topping:
In a small bowl, mix crushed cookies, freeze-dried strawberries, melted butter, and sugar until crumbly. Set aside.
2. Make the Cookie Dough:
Whisk together flour, baking powder, baking soda, and salt in a bowl.
In a separate bowl, beat butter and sugar until fluffy. Add egg, vanilla, strawberry powder, and food coloring (if using).
Gradually mix in dry ingredients until just combined.
3. Assemble & Bake:
Scoop dough into 1.5-tbsp balls, roll in the crunch topping, and place on a parchment-lined baking sheet.
Gently flatten each cookie slightly.
Bake at 350°F (175°C) for 10–12 minutes until edges are set.
4. Cool & Enjoy:
Let cookies rest on the baking sheet for 5 minutes before transferring to a wire rack.
