Creamy Velveeta Cajun Chicken with Penne Mozzarella Sauce
Ingredients:
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
2 tbsp olive oil
2 tbsp garlic butter
2 tbsp Cajun seasoning
1 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
For the Pasta:
1 lb penne pasta
4 tbsp butter
4 cloves garlic, minced
4 cups heavy cream
8 oz Velveeta cheese, cubed
4 oz cream cheese, softened
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes (optional)
Directions:
1. Prepare the Chicken: In a large bowl, toss the chicken pieces with olive oil, garlic butter, Cajun seasoning, paprika, salt, and pepper. Ensure the chicken is evenly coated.
2. Cook the Chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, or until golden brown and cooked through. Set aside.
3. Cook the Pasta: While the chicken is cooking, bring a large pot of salted water to a boil. Add the penne pasta and cook according to package directions until al dente. Drain the pasta and set aside.
4. Make the Sauce: In the same pot, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream, then add the Velveeta cheese and cream cheese. Stir continuously until the cheeses are completely melted and the sauce is smooth.
5. Combine: Add the cooked penne pasta to the cheese sauce. Toss to coat the pasta evenly. Stir in the mozzarella cheese and Parmesan cheese until melted and the sauce is thick and creamy. Add salt and pepper to taste.
6. Serve: Divide the creamy penne pasta among plates. Top with the golden-brown Cajun chicken. Sprinkle with red pepper flakes (optional) before serving.
