Easy French Onion Soup

Ingredients:

- 4 large onions, thinly sliced
- 4 tablespoons butter
- 2 tablespoons olive oil
- 1 teaspoon sugar
- 4 cups beef broth
- 1 cup water
- 2 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- Salt and pepper to taste
- 4 slices of baguette, toasted
- 1 cup grated Gruyère cheese

Directions:

1. In a large pot, heat butter and olive oil over medium heat until melted.
2. Add the sliced onions and sugar, stirring frequently. Cook for about 30-40 minutes until the onions are caramelized and golden brown.
3. Add the minced garlic and cook for another minute until fragrant.
4. Pour in the beef broth and water, then add the bay leaf and thyme.
5. Bring the soup to a gentle boil, then reduce heat and let it simmer for 20 minutes. Season with salt and pepper to taste.
6. Preheat the broiler. Ladle the soup into oven-safe bowls, place a toasted baguette slice on top of each, and sprinkle generously with Gruyère cheese.
7. Place the bowls under the broiler for 3-5 minutes, or until the cheese is melted and bubbly with golden spots.
8. Carefully remove from the oven and serve hot.
