🍝 Shrimp & Spinach Lasagna Rolls with Creamy Pepper Sauce 🦐
Ingredients:
For the Sauce:
1 jar (12 oz) roasted red peppers, drained
1/2 cup heavy cream
1 tablespoon olive oil
1/2 teaspoon smoked paprika
For the Pasta Rolls:
12 lasagna sheets, cooked
1 cup ricotta cheese
1 egg, beaten
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/2 cup grated Parmesan
1 cup fresh spinach, chopped
1 1/2 cups cooked shrimp, chopped
1 cup shredded mozzarella
Instructions:
1️⃣ Blend roasted red peppers, heavy cream, olive oil, and paprika.
2️⃣ Mix ricotta, Parmesan, egg, garlic powder, salt, pepper, and seasoning.
3️⃣ Stir in spinach and shrimp.
4️⃣ Spread mixture onto lasagna sheets, roll, and place in a baking dish.
5️⃣ Cover with sauce and mozzarella, then bake at 375°F (190°C) for 20-25 minutes.
6️⃣ Serve warm!
