Raspberry Chocolate Lava Cupcakes
Ingredients:
For the Cupcakes:
1 cup all-purpose flour
½ cup cocoa powder
1 teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter, melted
¾ cup sugar
2 large eggs
1 teaspoon vanilla extract
½ cup buttermilk
½ cup hot water or coffee
12 chocolate truffles or chocolate squares
For the Raspberry Buttercream:
½ cup unsalted butter, softened
2 cups powdered sugar
¼ cup fresh raspberry puree (strained)
½ teaspoon vanilla extract
For the Chocolate Ganache:
½ cup dark chocolate chips
¼ cup heavy cream
For Garnish:
Fresh raspberries
Chocolate chips
Instructions:
1️⃣ Preheat oven to 350°F (175°C) and line a cupcake tin with liners.
2️⃣ In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
3️⃣ In another bowl, mix melted butter, sugar, eggs, and vanilla.
4️⃣ Alternately add the dry ingredients and buttermilk, then stir in hot water/coffee until smooth.
5️⃣ Fill cupcake liners halfway, place a chocolate truffle in the center, then cover with more batter.
6️⃣ Bake for 18-20 minutes until set but still gooey in the center. Let cool.
7️⃣ For the frosting: Beat butter until fluffy, gradually add powdered sugar, then mix in raspberry puree and vanilla. Pipe onto cupcakes.
8️⃣ For the ganache: Heat cream, pour over chocolate chips, and stir until smooth. Drizzle over cupcakes.
9️⃣ Garnish with fresh raspberries and extra chocolate chips!
