Decadent Chocolate Coconut Cupcakes with a Sweet Surprise

1 cup all-purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 cup whole milk
1/2 cup coconut milk
1 cup sweetened shredded coconut
1/2 cup chopped pecans
Directions
Preheat the oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners.
In a medium-sized bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
In a separate bowl, cream the butter and eggs together until light and fluffy. Add vanilla extract and mix well.
Gradually add the dry ingredients into the wet ingredients, alternating with the milk and coconut milk. Mix until combined.
Fold in the shredded coconut and chopped pecans.
Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely before frosting.
