Taco Stuffed Sweet Potatoes
Ingredients:
- 2 medium sweet potatoes
- 1 cup cooked ground beef or turkey (or plant-based alternative)
- 1 cup black beans, rinsed and drained
- 1 cup corn (fresh, frozen, or canned)
- 1 teaspoon taco seasoning
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheese (cheddar or Monterey Jack)
- 1 avocado, diced
- Sour cream or Greek yogurt for serving
- Fresh cilantro for garnish
Directions:
1. Preheat your oven to 400°F (200°C).
2. Wash and dry the sweet potatoes, and then poke a few holes in them with a fork.
3. Place them on a baking sheet and bake for 45-60 minutes, or until they're tender.
4. While the sweet potatoes are in the oven, heat a skillet over medium heat and combine the ground meat, black beans, corn, and taco seasoning. Cook the mixture until it's heated through, which should take about 5-7 minutes.
5. Once the sweet potatoes are done, take them out of the oven and let them cool for a bit.
6. Cut each one in half lengthwise and use a fork to fluff up the insides.
7. Fill each half with the taco mixture and then top with diced tomatoes, cheese, and avocado.
8. Serve with a dollop of sour cream or Greek yogurt and garnish with fresh cilantro.
