Ingredients:
1 pie crust (store-bought or homemade)
1 can (20 oz) crushed pineapple, well drained
1 cup granulated sugar
1/2 cup whole milk
1/4 cup unsalted butter, melted
1/4 cup all-purpose flour
2 eggs
1 tsp vanilla extract
Pinch of salt
Directions:
Preheat your oven to 350Β°F (175Β°C). Place your pie crust into a 9-inch pie dish, crimping the edges if desired. Set aside.
Prepare the filling: In a mixing bowl, whisk together the eggs, sugar, flour, and salt until smooth. Stir in the milk, melted butter, and vanilla extract, then fold in the drained crushed pineapple.
Assemble the pie: Pour the pineapple mixture into the prepared pie crust, smoothing it out evenly.
Bake the pie: Place the pie on the center rack of the oven and bake for 50β55 minutes, or until the center is set and the top is lightly golden. If the edges of the crust brown too quickly, loosely tent them with foil halfway through baking.
Cool completely: Allow the pie to cool at room temperature for at least 1β2 hours so it can set properly. It can be served chilled or at room tempβboth ways are delicious!
