These Coffee Cheesecake Cupcakes are a coffee lover's dream come true! ☕😍
Ingredients:
1 cup graham cracker crumbs
2 tablespoons sugar
4 tablespoons melted butter
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1/4 cup sour cream
1/4 cup heavy cream
1 tablespoon instant coffee granules
1 teaspoon vanilla extract
Caramel sauce for drizzling
Chocolate-covered espresso beans for garnish
Directions:

Preheat your oven to 325°F (163°C). Line a muffin tin with cupcake liners.
In a medium bowl, combine the graham cracker crumbs, 2 tablespoons of sugar, and melted butter. Mix until well combined.
Press about a tablespoon of the mixture into the bottom of each cupcake liner to form the crust. Bake for 5 minutes, then remove and let cool.
In a large bowl, beat the cream cheese and 1/2 cup sugar until smooth and creamy.
Add the eggs one at a time, beating well after each addition.
Mix in the sour cream, heavy cream, instant coffee granules, and vanilla extract until fully combined.
Spoon the cheesecake batter over the cooled crusts, filling each liner almost to the top.
Bake for 18-20 minutes, or until the centers are set but still slightly jiggly.
Let the cupcakes cool to room temperature, then refrigerate for at least 2 hours or until fully chilled.
Drizzle with caramel sauce and top with chocolate-covered espresso beans before serving.
