Mediterranean Tomato and Halloumi Bake
This dish brings together the best of Mediterranean flavors with a rich tomato-based vegetable sauce topped with crispy, salty halloumi. A simple one-pot meal, it's packed with courgettes, aubergines, and warming spices. The quick preparation and bold flavors make it a perfect choice for a midweek meal. Serve it with crusty bread, couscous, or a fresh salad for a complete and satisfying dinner.
1 tsp Olive oil
1 Large onion, chopped
3 Cloves garlic, crushed
2 Medium courgettes, chopped
1 Large aubergine, chopped
1 tsp Ground cumin
1 tsp Smoked paprika
400 g Tin chopped tomatoes
1 tbsp Tomato puree
1 tsp Honey
Salt and pepper
250 g Halloumi cheese
Directions:
1 Heat oil in a large pan. Add onion and garlic, cooking for 5 minutes.
2 Add courgettes, aubergine, cumin, and paprika. Cook for 5 more minutes.
3 Stir in tomatoes, puree, honey, and seasonings. Add ½ can of water. Simmer for 10 minutes.
4 Preheat the grill. Slice halloumi and place it on top of the sauce. Brush with oil.
5 Grill for 5 minutes until golden and crispy.
