Creamy Garlic Herb Salmon with Spinach & Mushrooms
Ingredients:
2 salmon fillets
2 cups fresh spinach
1 cup sliced mushrooms
1 tbsp olive oil
1 tbsp butter
2 cloves garlic, minced
1/2 cup heavy cream
1/4 cup grated Parmesan
1 tbsp chopped parsley
Salt & pepper to taste
Instructions:
1. Season salmon with salt and pepper. Sear in olive oil over medium-high heat, 4–5 mins per side. Set aside.
2. In the same pan, sauté mushrooms and garlic in butter. Add spinach and cook until wilted.
3. Pour in cream and Parmesan; stir until smooth. Add parsley.
4. Return salmon to pan, spoon sauce over, and simmer 2 mins.
5. Serve hot!
