Red Velvet Strawberry Cheesecake Recipe
Ingredients
For the Red Velvet Cake Layers:
2 ½ cups (310g) all-purpose flour

1 ½ cups (300g) granulated sugar

1 tsp baking soda

1 tsp cocoa powder

1 tsp salt

1 cup (240ml) vegetable oil

1 cup (240ml) buttermilk, room temp

2 large eggs, room temp

1 tsp vanilla extract

1 tsp white vinegar

1 tbsp red food coloring

For the Cheesecake Layer:
16 oz (450g) cream cheese, softened

¾ cup (150g) granulated sugar

2 large eggs

½ cup (120ml) sour cream

1 tsp vanilla extract

1 tbsp cornstarch

For the Strawberry Filling:
1 ½ cups (225g) fresh strawberries, diced

¼ cup (50g) granulated sugar

1 tbsp cornstarch

1 tbsp lemon juice

For the Cream Cheese Frosting:
16 oz (450g) cream cheese, softened

½ cup (115g) unsalted butter, softened

4 cups (480g) powdered sugar

1 tsp vanilla extract

For Garnish (Optional):
Fresh strawberries, sliced

Instructions
1. Make the Cheesecake Layer
Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and line it with parchment.

Beat cream cheese and sugar until smooth. Add eggs, one at a time, mixing well.

Mix in sour cream, vanilla, and cornstarch. Pour batter into the prepared pan.

Bake for 35-40 minutes until the center is set. Let cool completely, then chill for at least 4 hours (overnight is best).

2. Make the Red Velvet Cake
Preheat oven to 350°F (175°C). Grease two 9-inch cake pans.

In a large bowl, whisk flour, sugar, baking soda, cocoa powder, and salt.

In another bowl, whisk oil, buttermilk, eggs, vanilla, vinegar, and food coloring.

Gradually mix wet ingredients into dry until just combined.

Divide batter evenly into prepared pans and bake for 30-35 minutes. Let cool completely.

3. Make the Strawberry Filling
In a saucepan over medium heat, combine strawberries, sugar, cornstarch, and lemon juice.

Stir and cook until thickened (5-7 minutes). Let cool.

4. Make the Cream Cheese Frosting
Beat cream cheese and butter until smooth.

Gradually add powdered sugar and vanilla, beating until fluffy.

5. Assemble the Cake
Place one red velvet cake layer on a serving plate. Spread a thin layer of frosting.

Add the cheesecake layer and spread a layer of strawberry filling on top.

Place the second red velvet cake layer on top.

Frost the entire cake with cream cheese frosting.

6. Garnish & Serve
Decorate with fresh strawberries and red velvet crumbs.

Chill for 1 hour before slicing.
