High Protein Low Carb Taco Salad
Ingredients:
1 lb ground beef (or ground turkey or chicken for lower fat)
1 packet (1 ounce) taco seasoning
1/2 cup water
1 cup shredded cheddar cheese (or your favorite cheese)
1/2 cup chopped red onion
1/2 cup chopped green bell pepper
1 (15 ounce) can black beans, rinsed and drained (optional, adds carbs, consider omitting for a stricter low-carb option)
1/2 cup chopped cilantro
1 avocado, diced
1/4 cup sour cream or Greek yogurt (optional)
Optional toppings: sliced jalapenos, hot sauce, salsa
Instructions:
1. In a large skillet, brown the ground beef over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
2. Stir in the taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, or until the liquid is mostly absorbed and the beef is cooked through.
3. While the beef is cooking, prepare your other ingredients. Chop the red onion, green bell pepper, cilantro, and avocado. If using, rinse and drain the black beans.
4. In a large bowl, combine the cooked ground beef, cheddar cheese, red onion, green bell pepper, black beans (if using), and cilantro. Gently mix everything together.
5. Divide the taco salad mixture among bowls or plates.
6. Top with diced avocado, a dollop of sour cream or Greek yogurt (if using), and any other desired toppings like sliced jalapenos, hot sauce, or salsa.
7. Serve immediately and enjoy!
