Ingredients
8 oz (225g) pasta (penne or fusilli work well)
1 lb (450g) boneless, skinless chicken breasts, sliced
2 tablespoons olive oil
3 cloves garlic, minced
1 cup sun-dried tomatoes, chopped (oil-packed for extra flavor)
4 cups fresh spinach
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh basil or parsley (for garnish)
Instructions
Cook the Pasta
Boil Pasta: Cook the pasta according to package instructions. Drain and set aside, reserving a bit of the pasta water.
Cook the Chicken
Heat Oil: In a large skillet, heat olive oil over medium heat.
Cook Chicken: Add the sliced chicken and season with salt and pepper. Cook for about 5-7 minutes, or until fully cooked and browned. Remove from the skillet and set aside.
Prepare the Sauce

Combine Sauce Ingredients: Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and combined. If the sauce is too thick, add a splash of reserved pasta water to reach desired consistency.
Combine and Serve
Mix Everything: Return the cooked chicken to the skillet, then add the drained pasta. Toss everything together until well coated in the sauce.
Plate: Serve hot, garnished with fresh basil or parsley and additional Parmesan cheese if desired.
