Frittata di Spaghetti 🇮🇹 🍝 Turn leftover spaghetti into a crispy, cheesy frittata!
Ingredients:
• 2 cups cooked spaghetti (200g)
• 4 eggs
• ½ cup Parmesan cheese (50g)
• 2 tbsp olive oil (30ml)
• ½ cup mozzarella cheese, shredded (50g)
• Salt and pepper
• Fresh parsley for garnish
Instructions:
1. Whisk eggs, Parmesan, salt, and pepper.
2. Mix in spaghetti and mozzarella.
3. Heat olive oil in a pan, pour in mixture, and cook until golden.
4. Flip and cook the other side, garnish with parsley, and serve!
