2 chicken breasts, cut into strips 🍗

For the Sweet Potato Wedges
2 medium sweet potatoes, cut into wedges 🍠
1 tbsp olive oil 🫒
1/2 tsp paprika 🌶️
1/2 tsp garlic powder 🧄
Salt, to taste 🧂
For the Avocado Salsa
1 avocado, diced 🥑
1/2 cup cherry tomatoes, halved 🍅
1/4 cup red onion, finely chopped 🧅
1 tbsp lime juice 🍋
Salt and pepper, to taste 🧂
Instructions
Prepare the Sweet Potatoes: Preheat oven to 400°F (200°C). Toss sweet potato wedges with olive oil, paprika, garlic powder, and salt. Spread on a baking sheet and roast for 20-25 minutes, flipping halfway.
Grill the Chicken: Heat a grill pan over medium heat. Rub chicken strips with olive oil, garlic powder, thyme, salt, and pepper. Cook for 3-4 minutes per side or until golden and fully cooked.
Make the Salsa: Combine avocado, cherry tomatoes, red onion, lime juice, salt, and pepper in a bowl. Gently toss to mix.
Assemble the Plate: Serve grilled chicken with sweet potato wedges and a generous scoop of avocado salsa. Add your favorite dipping sauce, if desired.
