Ingredients:
1 1/2 cups warm water
1 packet active dry yeast (2 1/4 teaspoons)
1 tablespoon granulated sugar
4 cups all-purpose flour
1 teaspoon salt
1 cup shredded mozzarella cheese
10 cups water
2/3 cup baking soda
1 large egg yolk beaten with 1 tablespoon water (for egg wash)
Coarse salt, for sprinkling
Fresh parsley, chopped (optional, for garnish)
Instructions:
Activate the Yeast: In a large bowl, combine warm water, yeast, and sugar. Let sit for about 5 minutes until it becomes frothy.
Make the Dough: Add flour and salt to the yeast mixture and mix until a dough forms. Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.
Rest: Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.
Prep the Cheese: Divide the mozzarella into 8-10 pieces.
Shape the Pretzels: Preheat the oven to 450°F (230°C). Divide the dough into 8-10 equal pieces. Roll each piece into a rope and flatten it slightly. Place a piece of
mozzarella along the length of the dough and fold the dough over the cheese, pinching the edges to seal. Shape into pretzel twists.
Baking Soda Bath: In a large pot, bring 10 cups of water and baking soda to a boil. Carefully drop each pretzel into the boiling water for about 30 seconds. Remove with a slotted spoon and place on a parchment-lined baking sheet.
Egg Wash and Bake: Brush each pretzel with the egg wash, sprinkle with coarse salt, and bake for 12-15 minutes until golden brown.
