Keto Breakfast Flatbread Pizza
Ingredients (2 servings)
For the keto flatbread crust:
1 ½ cups shredded mozzarella cheese
2 tbsp cream cheese
1 cup almond flour
1 large egg
½ tsp baking powder
Pinch of salt
For the toppings:
2 eggs (fried or baked on top)
2–3 slices bacon or ham, cooked and chopped
½ cup fresh spinach
½ roasted red bell pepper (or sautéed peppers)
¼ cup ricotta or cream cheese (for spreading on base)
1 tsp olive oil
Dried oregano, basil, or Italian seasoning
Drizzle of sugar-free balsamic glaze (optional)
Instructions
Make the crust:
Preheat oven to 400°F (200°C).
Melt mozzarella and cream cheese in microwave (about 1 min). Stir smooth.
Mix in almond flour, egg, baking powder, and salt. Knead into dough.
Roll between parchment sheets into oval/rectangle flatbread shape.
Bake 8–10 minutes until golden.
Prepare toppings:
Sauté spinach in olive oil until wilted.
Roast or sauté peppers if not already roasted.
Fry or bake bacon/ham until crisp.
Assemble:
Spread ricotta/cream cheese on baked crust.
Top with spinach, peppers, and bacon.
Crack an egg on top (or pre-fry the eggs separately and place them after baking).
Bake:
Return to oven for 6–8 minutes (or until egg whites set if cracked directly on pizza).
Finish & serve:
Sprinkle with oregano or Italian seasoning.
Drizzle with sugar-free balsamic glaze if desired.
