Makes: about 12 donutsPrep time: 20 minutesRise time: 1.5 hoursCook time: 2–3 minutes per batch (frying)

Ingredients:
• 2¼ tsp (1 packet) active dry yeast
• 1 cup (240ml) warm milk (about 40°C/105°F)
• ¼ cup (50g) granulated sugar
• 3 tbsp unsalted butter, melted
• 1 tsp salt
• 1 large egg
• 3 cups (375g) all-purpose flour, plus more for dusting
Vegetable oil, for frying

Optional Toppings & Fillings:
• Powdered sugar
• Glaze (powdered sugar + milk + vanilla extract)
Chocolate ganache or melted chocolate
• Sprinkles
Jam or custard for filling

Instructions:
1 Activate yeast: In a small bowl, combine warm milk, yeast, and 1 tbsp sugar. Let sit 5–10 minutes until frothy.
2 Make dough: In a large bowl, mix remaining sugar, melted butter, salt, egg, and yeast mixture. Gradually add flour and knead until smooth and slightly sticky, about 8–10 minutes by hand or 5 minutes in a mixer.
3 First rise: Cover the dough and let it rise in a warm place for about 1 hour or until doubled in size.
4 Shape donuts: Roll out dough on a floured surface to about 1 cm (½ inch) thickness. Use a donut cutter or two round cutters (one large, one small for the hole) to cut out donut shapes.
5 Second rise: Place donuts on baking sheets lined with parchment. Cover and let rise for 30–40 minutes until puffy.
6 Fry: Heat oil in a deep pan to 175°C (350°F). Fry donuts in batches, about 2 minutes per side, until golden brown. Remove and drain on paper towels.
7 Decorate: Once cooled, dust with powdered sugar, dip in glaze, drizzle chocolate, or fill with jam or custard as you like!
