2 tbsp coconut flour

2 tsp baking powder

½ tsp salt

Wet Mix:

4 large eggs

½ cup unsalted butter (melted) or coconut oil

½ cup erythritol (or monk fruit/stevia blend)

½ cup unsweetened almond milk (or heavy cream for richer texture)

1 tsp vanilla extract

½ tsp instant coffee powder (optional, enhances chocolate flavor)

Add-ins:

½ cup sugar-free chocolate chips (optional for gooey bites)

¼ cup chopped walnuts or pecans (optional, for crunch)

Instructions

Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.

Mix dry ingredients in one bowl: almond flour, cocoa powder, coconut flour, baking powder, and salt.

Whisk wet ingredients in another bowl: eggs, melted butter, erythritol, almond milk, vanilla, and coffee powder.

Combine wet and dry ingredients until smooth. Fold in chocolate chips or nuts if using.

Bake in the loaf pan for 40–50 minutes, until a toothpick inserted in the center comes out with only a few moist crumbs.

Cool completely on a wire rack before slicing. This helps it firm up and stay moist inside.
