Herb Crusted Salmon with Broccoli Linguine
Mediterranean Herb-Encrusted Salmon Atop Verdant Broccoli Linguine
Ingredients:

4 salmon fillets (6 oz each)
2 tablespoons olive oil, divided
3 cloves garlic, minced
1 cup fresh breadcrumbs
3 tablespoons fresh parsley, finely chopped
2 tablespoons fresh dill, finely chopped
1 tablespoon fresh thyme leaves
Zest of 1 lemon
2 tablespoons lemon juice
1 tablespoon Dijon mustard
Salt and pepper to taste
12 oz linguine pasta
1 large head broccoli, cut into small florets
1 shallot, finely diced
1/4 cup vegetable broth
2 tablespoons capers, drained
1/4 cup grated Parmesan cheese
Red pepper flakes (optional)

Directions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a bowl, combine breadcrumbs, parsley, dill, thyme, lemon zest, 1 tablespoon olive oil, salt, and pepper. Mix well.
Pat salmon fillets dry with paper towels. Place them skin-side down on the prepared baking sheet.
In a small bowl, mix Dijon mustard and 1 teaspoon of lemon juice. Brush this mixture on top of each salmon fillet.
Press the herb mixture onto the top of each salmon fillet, creating an even crust.
Bake for 12-15 minutes, or until salmon flakes easily with a fork.
Meanwhile, bring a large pot of salted water to a boil. Cook linguine according to package instructions, adding broccoli florets during the last 3 minutes of cooking. Reserve 1/2 cup of pasta water before draining.
In a large skillet, heat the remaining olive oil over medium heat. Add shallot and garlic, sauté until fragrant, about 2 minutes.
Add vegetable broth, remaining lemon juice, and capers to the skillet. Bring to a simmer.
Add the drained pasta and broccoli to the skillet, tossing to coat. Add some reserved pasta water if needed to create a light sauce.
Stir in Parmesan cheese and season with salt and pepper to taste.
Serve the salmon fillets over the broccoli linguine, garnish with additional herbs and red pepper flakes if desired.
