Brown Sugar Pop Tart Cookies
Ingredients:
For the Cookies:
2 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup unsalted butter, softened
3/4 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
For the Filling:
1/2 cup brown sugar
1 tablespoon cinnamon
1 tablespoon all-purpose flour
For the Glaze:
1 cup powdered sugar
1 1/2 tablespoons milk
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
Directions:
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking powder, and salt.
In a large bowl, cream butter, brown sugar, and granulated sugar until fluffy. Add the egg and vanilla and mix until combined.
Gradually mix in the dry ingredients until a soft dough forms.
Roll the dough into balls and flatten each into a disc. Spoon about 1/2 teaspoon of filling into the center of half of the discs.
Top with another disc, pressing the edges to seal and gently flatten to shape.
Bake for 10-12 minutes, until edges are just golden. Let cool completely.
Whisk glaze ingredients and drizzle over cooled cookies. Let set before serving.
